Easy Overnight Granola Recipe (also known as “Overnight JuNūla”!)

Do you find preparing breakfast a hassle?

Deciding what to eat and allowing time to prepare it in the morning just isn’t in the cards sometimes. When you’re heading out the door early for work or for school, you just need to “grab and go”.

JuNūla makes you feel like your life has a bit more order to it.

All our sweeter granolas pair well with yogurt. It’s our favorite way to enjoy JuNūla, actually. We often layer JuNūla with yogurt and fresh fruit making a granola parfait, but, having something ready ahead of time is a lot easier.

We’re also into simplicity whenever possible and often the easiest recipes are the best.

You may have heard of “overnight oats” or “overnight muesli”? Overnight granola, or, as we like to call it, “Overnight JuNūla”, is similar, replacing oats with your favorite flavor of JuNūla. Beyond being tasty, this change boosts the protein and reduces the carbs.

As you know from experience, JuNūla isn’t dry and hard like many granolas. The way we make it gives it its softer, chewier texture. This helps make this recipe work, as it minimizes the ingredients necessary to give you a creamy, satisfying, breakfast dish!

Which flavor of JuNūla ignites your imagination? Is is Cherry Berry, with cherries, goji berries, and raisins? Or Just Enough Chocolate, with 85% dark chocolate and figs? Maybe Tropical Sunrise with banana, mango, and pineapple? Or Cappuccino Italiano with subtle coffee notes? They are all perfect for this recipe - it's up to what sounds good to you! 

This recipe is, as its name suggests, easy to make and, when you’re ready, just take it out of the fridge and dig in! If you make it in a jar with a closeable lid, you can take it with you and eat later. 

Here’s all it takes to make it:

Ingredients:

1/3 cup JuNūla (your favorite flavor, of course! ❤️)

1/3 cup yogurt, plain or fruit flavored (we use our homemade non-dairy yogurt mixed with forest berries)

Toppings:

Fresh fruit of your choice

A spoonful of JuNūla is also a nice addition

Instructions:

Add the JuNūla and yogurt to a jar or other container and stir to mix well.

Refrigerate overnight or at least 5 hours.

In the morning, add additional yogurt if needed to reach your desired consistency. Add fresh fruit for a topping. You can also sprinkle a tablespoon of JuNūla over the top for added texture.
