My favorite non-dairy yogurt recipe

I like yogurt with my JuNūla and find that store-bought yogurts don’t meet all of my needs. I don’t use milk products and limit my sugar as well. Therefore, I wanted to find an alternative and have adapted a recipe to my needs. I want to share it with you and hope you also like it!

Ingredients

16 oz unsweetened coconut „milk“ 

16 oz unsweetened almond „milk” with vanilla

1-2 Tbsp erythritol

1 tsp gelatin (optional)

1 packet (5grams) of belle+bella starter / or 1 capsule of probiotics

Instructions

1.    Mix the erythritol and gelatin in a saucepan.

2.    Slowly add the „milks”, stirring to dissolve the dry ingredients

3.    Heat „milk” to 115 F, stirring occasionally

4.    In a separeate bowl, mix the starter or opened capsule in a little heated „milk” until the powder has completely dissolved

5.    Add this starter mix to the heated „milk”, and mix well

If you have a yogurt maker, follow its instructions for cooking the yogurt.

If you do not have an automatic yogurt maker, you can use your oven or warming drawer. Set the oven for 104F  (warming drawer – low).

Then:

6.    Cover the saucepan and place in the heated oven or warming drawer

7.    Yogurt will be ready in 10-12 hours. 

8.    Remove the saucepan from the oven and place in the refrigerator for 4-5 hours.

You can flavor it with any fruits.
