Easy and Healthy Spinach Strawberry Salad Recipe
What's not to like about spinach salads? The fresh spinach leaves tossed with a balsamic vinaigrette dressing plus other ingredients to add texture and bursts of contrasting flavors is a nice addition to any meal. Add some protein (salmon is perfect!) and you have an entire meal in one bowl.
I've found myself overthinking and overcomplicating spinach salad and have come up with this easy recipe to minimize complexity and prep time without sacrificing flavor.
This recipe uses only four main ingredients: spinach (naturally!), purple onion, strawberries, and Cherry Berry JuNūla.
The best news is that all ingredients are available year round, so you can enjoy this treat anytime you choose.
Adding Cherry Berry JuNūla to this salad introduces two great elements: the texture of both the nuts and the fruits (tart cherries, goji berries and raisins) and the flavors, with the sweetness of the nuts, raisins and goji berries and the tartness of the cherries.
Simple and Delicious Spinach Salad Recipe
Serves 2
Ingredients
3 oz (about 4 cups) fresh spinach
1/8 purple onion, sliced thin
4 strawberries, quartered
1/3 cup Cherry Berry JuNūla
Spinach Salad Dressing Recipe (Note: will serve more than 2):
¼ Cup balsamic vinegar
3 Tablespoon olive oil
2 Tablespoons erythritol (for no added sugar) or 1T agave or honey
1 Teaspoon Dijon mustard
¼ Teaspoon kosher salt
Fresh ground pepper to taste
Whisk all dressing ingredients until well incorporated.
Put spinach in large bowl, add onions and strawberries
Drizzle dressing over top to taste, toss to mix
Sprinkle Cherry Berry JuNūla over top
