Living a healthy lifestyle does not mean the food is boring or tasteless. It’s quite the opposite, where the real food taste shines through!
When we first moved to a gluten-free and grain-free diet, one of the challenges was how to create some of our favorite dishes using different ingredients.
We would adapt familiar recipes using new grain-free and gluten-free ingredients. Some worked, some were less successful. We'd try them again, changing the balance of ingredients until we hit upon a recipe that was a "keeper".
As you can appreciate, everyone like a little variety for breakfast.

The “secret sauce” in this gluten-free and grain-free pancake recipe is the addition of JuNūla to the mix. This adds great texture and flavor from the granola to the pancakes. Each of our flavors adds its own unique touch to a batch of pancakes.

This May Be The Best Gluten-free, Grain-free Pancake Recipe
Ingredients
3 eggs
½ cup soda water (still water also works)
1 Tablespoon vanilla extract
Optional: 1 teaspoon almond extract (brings out the almond flavor in the flour)
Optional: 1 tablespoon of agave (the pancakes have a natural sweetness without the agave)
1 ½ cups almond flour
½ teaspoon salt
¼ teaspoon baking soda
½ cup of your favorite JuNūla Just Nuts Granola flavor
Instructions
Whisk wet ingredients together in a large mixing bowl
Add dry ingredients, except JuNūla
When mixed well, fold in JuNūla
Cook on a lightly oiled (we use coconut oil) griddle on medium heat (Tip: cooking with nut flours is different as they brown faster than grain-based flours. Just keep an eye on your pancakes so they don't burn!)
Makes about 18, 3-inch pancakes
Serve with your favorite topping. Enjoy!
